My Favorite Muffin



Pumpkin Chocolate Chip Muffins -- my favorite muffin and my favorite Autumn food. I just had to make them today 'cause it's the first day of fall!
Here's the recipe. I've been making them for years. The original recipe was from Taste of Home magazine. (Disclaimer: They aren't the healthiest muffin around, but I'm sure you could tweak it to use more "sane" ingredients!)
4 eggs
2 cups sugar
1 - 15 oz. can pumpkin
1 1/2 cups vegetable oil
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon salt
2 cups (12 oz.) semi-sweet chocolate chips
In a large mixing bowl, beat eggs, sugar, pumpkin, and oil until smooth.
Combine flour, baking soda, baking powder, cinnamon, and salt.
Add to pumpkin mixture and mix well.
Fold in chocolate chips.
Fill greased or paper-lined muffin cups three-fourths full.
Bake at 400 degrees for 16 -20 minutes or until they test done.
Cool in pans 10 minutes before removing to a wire rack.
Yield: 24+ standard-size muffins.
These are so easy to make. Bake up a batch today and celebrate fall!

  2. I made an apple pie with a new recipe which was just OK, not fabulous.

    These muffins, however, are fabulous! I should have made these instead!

    Dorothy!! I am SOOOOO glad you posted this! I made this about two years ago, this exact recipe... but have been looking for it this year and was unable to find it (and remember where I found it originally). What a special treat to find this today!

  4. I love all things pumpkin (except pumpkin pie stange I know) and I will be making these. If I make any changes I will come back and let you know.
